Fire Roasted Stuffed Jalapeños

16 Jalapenos cut in half seeds removed
1 link Chorizo Sausage sliced length wise and grilled
2 shallots julienne
1 clove Garlic diced
1/2 cup extra virgin olive oil
2 oz Citron Vodka
1/4 # goat cheese
¼ parmesan cheese
2 fire roasted red peppers
½ cup Japanese bread crumbs
2 TBL Creepin Quag Hot Sauce 2011 Scovie Winner
1 6 oz Jar Mojo’s Tapenade 2010 NEPTS 1st Place Winner

Roll red peppers in olive oil place under broiler turning as they blacken
When red peppers have blackened all the way remove from broiler, place into a zip lock bag to sweat for 15 minutes
Toss Jalapeños in olive oil and place cut side down on a baking sheet and roast under broiler just until the skins begin to brown
Place remaining olive oil into a sauté pan heat
Add garlic and shallot and sauté until translucent do not brown!
Dice grilled chorizo into a small dice and add to sauté pan
Add Creepin Quag Hot Sauce, Mojo’s Tapenade, then deglaze pan with vodka being careful when the sauté pan flames, burn off alcohol, then add to mixing bowl
Remove red peppers from zip lock bag, remove blackened skin, clean inside if peppers and dice into ¼ pieces
Add all ingredients except the to mixing bowl and mix well except the
Jalapeños half’s.
Lay a Jalapeños half onto a sheet pan fill with stuffing, top with second Jalapeños half
Place stuffed Jalapeños into a 400 degree oven for 5-7 minutes until hot

Serve with lime cilantro sour cream
