Sizzlin Holiday Stuffing for the Bird

5# Sweet Italian turkey sausage casings removed
1/2 cup olive oil
½ cup maple syrup
5 celery stalks diced
1 medium onion diced
2 tablespoons fennel seed
1 cup dried cranberries
2 tablespoons Creepin Quag Award Winning Hot Sauce
1 package Pepperidge Farms Country Style Stuffing crumbs
3 cups chicken broth
2 beaten eggs
2 # shredded mozzarella cheese

Add ¼ cup olive oil to sauté pan, add turkey sausage meat (casings removed) and sauté until sausage has been cooked, chop with spoons until sausage is crumbled.
Drain excess juice add ¼ olive oil, celery and onion and sauté until onion and celery are cooked.
Add fennel seed, Creepin Quag Hot Sauce, Cranberries and maple syrup mix well
In a mixing bowl add sausage mixture chicken stock, beaten egg, bread crumbs and 1# shredded cheese and mix well.
Place into a baking dish. Top with remaining cheese and bake in a 400 degree oven for 30-40 minutes until golden brown, serve with your turkey bird
