Father’s Day is around the corner, and the last thing Dad needs is a new tie. This year, indulge his manly man side with a hot and spicy gift from Sizzlin Sauces in Conway.

Makers of five award-winning hot sauces, Sizzlin Sauces has been spicing up plates and palettes since 2003.

Spittin Fire was our first sauce, with Spittin Fire XXX following shortly thereafter,” owner and chef Bud Selmi said. “In the fall of 2002, we had a bumper crop of about 15 pounds of habanero peppers from our garden. I made a batch of sauce, gave away a bunch to friends. Everyone loved the sauce and said, ‘You should sell this stuff,’ so I did.”

Selmi’s company also produces Creepin’ Quag, which is a fruity sauce loaded with cranberries, plums and prickly pear cactus, plus spice; Howlin’ Hollar, which includes pumpkin, passion fruit and prickly pear; and Papa Jack’s Buffalo Hot Sauce.

Selmi’s Sizzlin Sauces have won 44 awards, including national first-place awards at the Scovie Awards, the Fiery Food Challenge, the Hot Pepper Awards, America’s Best Food Events and the New England Products Trade Show.

Selmi said his best-selling sauce is the Creepin’ Quag fruity hot sauce, which is also the one with the most national awards. It’s his personal favorite.

Next up for Sizzlin Sauces are Chili Sweet Sensation and Key Lime-Mango-Pomegranate Hot Sauce for Wings.

Selmi said the Chili Sweet Sensation is his second favorite, and that it tested well among patrons at the Margarita Grill restaurant in Glen.

Two relishes, Mojo’ Tapenade and Razing Cane Garlic Relish, complete the lineup of products Selmi makes, but the Sizzlin Sauces Web site at www.sizzlinsauces.com offers other great gourmet items for sauce and spice lovers, including mustards from the Dave’s Insanity line.

Some of those other products are included in the Web site’s lineup of gift baskets and gift sets, all sure to evoke a big grin from any dad who loves hot stuff.

But Selmi said the best value for a Father’s Day gift is a membership in the Hot Sauce of the Month Club. The club is available for three, six or 12 months, and the 12-month club includes a free 13th month – the Baker’s Dozen – and all club memberships have free shipping.

Southwestern Meat Puffs

Southwestern Meat Puffs
2 # Ground Beef
2 Tbl Poblano Pepper Minced
1/2 cup Onion Minced
2 Tbl Green Chili Minced
1 Clove Fresh Garlic Minced Very Fine
2 tsp Chili Powder
1/2 tsp Onion Powder
1/2 tsp Cumin
1 Tbl Spittin Fire™ or Spittin Fire XXX™ Award Winning Sauces
1/2 tsp Kosher Salt
1/4 cup Corn Tortillas Minced Fine
1/4 cup Corn Bread Minced Fine
1/4 cup Tomato Sauce
1/2 shredded Cheddar Cheese

For the Puffs
2 Eggs Beaten
2 Boxes of Puff Pastry Sheets Thawed
1 # Cream Cheese Softened
1 Egg Beaten

Procedure:
Put the corn tortillas into a food processor and process until coarse meal
Do the same for the dried corn bread
Mix all remaining ingredients for the meat mixture together well

(Saving cheese for later)
Roll into 1 OZ balls and place onto a greased cookie sheet or Place meat mixture into greased mini muffin tins
Bake in a 350 degree oven for 30-40 minutes, until internal temperature reaches 160
Place meat balls or cups into a refrigerator and chill 2-3 hours.

For the Puffs
sprinkle a little flour onto a cutting board and roll out puff pastry to about 1/8 thick
cut rolled out puff sheet into square large enough to completely wrap meat balls or cups
beat cream cheese with a mixer, spread cream cheese evenly around balls or cups
place cheese covered ball on a puff square and fold puff pastry around ball or cup so you completely cover meat.
Place seam side down onto a greased cookie sheet
Brush each puff with beaten egg
Bake at 375 for 15 minutes until golden brown
Serve with your favorite Salsa or Dip

Maple Glazed Scallop Appetizer served over Spinach Florentine

Maple Glazed Scallop Appetizer served over Spinach Florentine
2# Dry Scallops
2 Tbl Olive Oil
1/2 cup Maple Syrup
1/4 cup Cooking Sherry
2 Tbl Creepin Quag™ Hot Sauce 2011 Scovie Award Winner

Spinach Florentine Mix
1# Fresh Baby Spinach
1 Clove Fresh Garlic Minced Very Fine
1 Whole Shallot Minced Very Fine
2 Tbl Olive Oil
1/2 cup Shredded Parmesan Cheese
1/2 tsp Kosher Salt
1/4 cup White Wine
1/2 cup Heavy Cream

Procedure
Let’s begin with the Florentine
Place 2 TBL olive oil in sauté pan on medium high heat
Add Minced Shallot and Garlic
Sauté until garlic and shallot are translucent (DO NOT Brown)
Deglaze with White Wine
Add Spinach and sauté until Spinach has softened
Add heavy cream and reduce until cream begins to thicken
Stir in Parmesan Cheese and salt
Keep warm until scallops are ready

Procedure for the Scallops
Heat Olive Oil in sauté pan until it just begins to smoke
Add Scallops and cook for 3-4 minutes turning frequently
Add Sherry to Hot Pan
Reduce the liquid until almost gone
Add Creepin Quag™ Hot Sauce and Syrup and toss with Scallops
Serve the Scallops on the plated warm Spinach Florentine Mixture
Drizzle with Lime Sour Cream

Lime Sour Cream
3 Limes
2 Cups sour cream

Procedure
With a vegetable zester, zest 3 limes
Place lime zest strips into a food processor and completely mince
Juice the limes and add to processor
Add 2 cups sour cream and pulse until smooth
Place lime sour cream into a squirt bottle and drizzle over Maple Scallops
