Spicy Southwestern Sirloin Burritos

Spicy Southwestern Sirloin Burritos

2 # Sirloin Flap meat (similar to flank steak or skirt steak in New England sold as sirloin tips)
1/4 cup Papa Jack’s Buffalo Hot Sauce 2011 1st Place Scovie Winner
3 cloves garlic minced fine
2 TBL Dijon Mustard
1/4 White Balsamic Vinegar
2 TBL Montreal Steak Seasoning
1 onion julienne in 1/8 inch strips
1 red pepper julienne in 1/8 inch strips
1 yellow pepper julienne in 1/8 inch strips
2 cups refried beans
3 cups diced plum tomatoes
2 cups fresh green chilies chopped fine
¼ cup Olive Oil
1 9 oz jar Mojo’s Tapenade 2010 1 st Place Award Winner
2 cups Monterey Jack Cheese
6 12” flour Tortillas
Lime Cilantro sour cream

Slice Sirloin Flap into thin sheets cutting with the grain
Place sirloin into a zip lock baggie and add garlic, mustard, Papa Jack’s Buffalo Hot Sauce, steak seasoning and Dijon mustard and marinate at least 4 hours or over night
Heat olive oil, add sirloin flap and cook quickly turning once, remove from pan
Add julienne onions and peppers to hot pan and sauté until tender
Place tortilla on a flat surface; add 1/6 of beans to center of tortilla spreading toward the sides at the 3 and 9 o’clock portion of the tortilla
Place beef over the beans
Sprinkle with green chilies and tomatoes and Mojo’s Tapenade
Last add cheese to each tortilla
Fold each tortilla from the 3 and 9 o’clock portion of the tortilla 2” toward center
Then roll the tortilla (you should end up with a 3” log)
Place the 6 tortillas into a light greased glass baking dish and pop into a 400 degree oven for 10 minutes to melt cheese and warm the middle

When plating drizzle with Lime Cilantro Sour Cream and serve with a side of Mexican Rice

Lime Cilantro Sour Cream:

1 cup sour cream
¼ minced fresh cilantro very fine
1 juice of fresh lime

With a wire whisk whip sour cream with lime juice and cilantro, place into a squirt bottle to drizzle over Burritos

Southwestern Beef Tostada Stacks

12 6″ corn tortillias
1/2 cup sour cream
1 # flank Steak
1/4 rice wine vinegar
2 cloves garlic minced fine
1/4 Dijon Mustard
1 cup Guacamole
1 cup cooked black beans drained
1 cup Shred Jack Cheese
Veggie Oil as needed
1/2 cup chopped plum tomato
1/2 cup onion diced
2 Tbl diced jalapeno
1/2 cup diced tomatillio
1 peeled avocado sliced thin
2 Tbl Papa Jack’s Buffalo Hot Sauce 2011 1st Place Scovie Winner
1 9oz Jar Mojo’s Tapenade 2010 1 st Place Award Winner
1 cup shred lettuce
1/2 cup Feta Cheese

Rub flank steak with Papa Jack’s Buffalo Award Winning Hot Sauce and place in a zip lock bag, add vinegar, garlic and mustard, toss into fridge and marinate for 4 hours
Fry the tortillas in hot veggie oil until they are golden brown and crispy
Drain on paper towels
Grill steak and cut into thin strips cutting across the grain
Layer 1/4 of the flank steak and 1/4 of the cheese onto a tortilla then top with another tortilla
Cover the second tortilla with 1/4 of the beans and 1/4 sour cream and top with another tortilla
Spread 1/4 Guacamole, 1/4 Mojo’s Tapenade, 1/4 Jalapeno, and 1/4 onion top with last tortilla
Pop Tostada Stacks into a 400 degree oven for 4 minutes to warm
Plate your Tostadas and top with sliced avocado. tomatillo, tomato, shred lettuce and Feta Cheese
Serve with a side of Mexican Rice

Golden Chile Queso Dip

Golden Chile Queso Dip
1/2 # Cold Pak Cheddar
1/2 # Light Cream Cheese(Neuchâtel)
1/8 cup fresh Horseradish (minced fine)

1/4 cup diced fresh Jalapenos
1 tsp fresh ground black pepper
1/8 cup stone ground mustard
1/2 cups fresh salsa(Juices Drained)
2 Tbl Spittin Fire™ XXX

1 6oz jar Mojo’s Award Winning Tapenade

Procedure:
Place Softened Cheddar and Neuchâtel Cheeses into a mixer and beat on high speed until fluffy
Add rest of ingredients and mix well.
Refrigerate for 24 hours to blend flavors
Serve slightly warmed to soften with your favorite nacho chips

Twisted Cranberry Chicken

Twisted Cranberry Chicken

4 boneless chicken  breasts
1 cup dried cranberries
Dash Kosher Salt
Dash Black pepper
1 shallot (diced finely)
1/2 # baby Bella mushrooms (sliced thin)
2 tablespoons olive oil
4 oz goat cheese
1/2 cup shredded parmesan cheese
1 Tablespoon Creepin Quag™ Hot Sauce
1/ cup Chablis
1/2 cup flour
2 eggs beaten
2 cups Japanese bread crumbs

1 6oz Jar Mojo’s Tapenade

Procedure:
Place chicken breast between two pieces of plastic wrap. Lightly pound with a meat mallet
until chicken is about 1/8 inch thick, be careful not to tear the chicken flesh
place olive oil into pan and sauté shallot until translucent
add mushrooms and cranberries and sauté until mushrooms begin to soften
add white wine and sauté until most of the liquid is gone
remove from heat and stir in crumbled goat cheese, parmesan cheese, Mojo’s Tapenade  and Creepin Quag™
Hot Sauce. Mix together well.
Season each chicken breast with salt and pepper
Divide mushroom/cranberry mix into fourths and spread onto the chicken
Roll each breast, tucking in the ends so as to have a football shaped chicken
Roll each chicken into the flour, then dip into beaten egg and finally roll in the
Japanese Bread Crumbs so as to coat all sides.
Place in a lightly greased glass baking dish seam side down
Bake in a 375 degree oven until internal temperature of 160 degrees.

Serve with Hot Pepper Chutney

Hot Pepper Chutney
1 Red Bell Pepper 1/4 dice
1 Yellow Bell Pepper 1/4 dice
1 Green Bell pepper 1/4 dice
3/4 cup White Vinegar
2 Garlic Cloves minced fine
1/4 cup Sugar
1/4 cup Brown Sugar
2 TBl Crystallized Ginger minced fine
1/2 cup Golden Raisins
1 TBL Spittin Fire™ Hot Sauce (more if you like it Hot)

Procedure:
Combine all ingredients and simmer until mixture thickens, stirring occasionally
Cool and serve with the Twisted Cranberry Chicken

Note to Sizzlin Sauces fans. The new blog is supposed to be about me, what my thoughts are, ideas and suggestions. However after giving careful thought to what the content should consist of I quickly realized that “Facebook and Twitter,” is not really about me, it is about all of you as well. It is about all of the Hot Sauce Fans out there, all of the Hot Pepper Fans, all of you who Yearn for the Burn! We would like to make this blog about every thing and anything dealing with Hot Stuff. We want to post your stories about growing the Hottest of the Hot Peppers: Bhut Jolokia also called Naga Jolokia, and the Ghost Pepper, Red Savina Habanero, or any other hot varieties of peppers. We are also looking for Recipes, Pictures, Hot Sauce Favorites, or just general Hot Stuff conversations. So please send us your comments, thoughts, suggestions on topics or whatever Hot Stuff that puts some Sizzle into your life. Looking forward to hearing from you all!
